Chicken Breast with Apricot Sauce
If you're a fan of bold sweet and sour flavors, grilled chicken with apricot sauce is sure to satisfy your taste buds. The slight tartness of apricots, combined with the subtle sweetness and aroma of grilled chicken, creates the perfect balance in every bite. The apricot sauce seeps into the crispy golden skin, while the meat inside remains tender and juicy, making this dish both unique and irresistible. Grilled chicken with apricot sauce is perfect for parties or cozy family dinners.
Chicken Breast with Apricot Sauce
Ingredients:
- 1 chicken breast or thigh (about 200g)
- 1 small clove of garlic
- 1 small piece of ginger
- 1 lemon
- 1 stalk of leek (boaro)
- 1 cup (200ml) soy sauce
- 1 cup water
- 100ml mirin
- 1 tablespoon brown sugar
- 1 tablespoon cooking wine
- ½ tablespoon sesame oil
- 100g Dried Apricots (or 4-5 salted apricots)
- 1 teaspoon chili powder (optional for spice)
Instructions:
- Soak dried apricots in warm water until softened. Blend the apricots into a smooth puree and simmer over low heat until bubbling. Add lemon juice and let it cool.
- Clean the chicken with salt and lemon slices, rinse 2-3 times with fresh water. Pat dry and tenderize the chicken with a mallet.
- Mix the cooled apricot sauce with soy sauce, mirin, water, brown sugar, sesame oil, and cooking wine. Adjust seasoning to taste.
- Heat a pan without adding oil, sear the chicken until golden on both sides. If the chicken releases fat, wipe it away with a paper towel.
- Once the chicken is golden, pour the apricot sauce mixture into the pan. Add peeled garlic, a small piece of ginger, and chopped leek. Cover and cook on low heat until the sauce thickens, but don’t let it dry out completely—you’ll want to drizzle it over the chicken later.
- Slice the chicken, serve with hot rice, lettuce, and shredded cucumber. Drizzle the sauce over the top and enjoy!
